  • 1 tsp red pepper flakes (optional)
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Optional toppings: chopped fresh basil, extra Parmesan cheese

Instructions

  1. Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.
  2. Sauté the Garlic and Sun-Dried Tomatoes: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped sun-dried tomatoes. Cook for 2-3 minutes until fragrant.
  3. Make the Sauce: Pour in the heavy cream and vegetable broth. Stir in the salt, black pepper, and red pepper flakes (if using). Bring the mixture to a simmer and let it cook for 5-7 minutes until slightly thickened.
  4. Add the Spinach: Stir in the fresh spinach and cook until it wilts, about 2-3 minutes.
  5. Combine the Pasta and Sauce: Add the cooked spaghetti to the skillet and toss to coat evenly with the sauce.
