Ingredients
Scale
- 12 oz spaghetti
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp red pepper flakes (optional)
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- Optional toppings: chopped fresh basil, extra Parmesan cheese
Instructions
- Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.
- Sauté the Garlic and Sun-Dried Tomatoes: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped sun-dried tomatoes. Cook for 2-3 minutes until fragrant.
- Make the Sauce: Pour in the heavy cream and vegetable broth. Stir in the salt, black pepper, and red pepper flakes (if using). Bring the mixture to a simmer and let it cook for 5-7 minutes until slightly thickened.
- Add the Spinach: Stir in the fresh spinach and cook until it wilts, about 2-3 minutes.
- Combine the Pasta and Sauce: Add the cooked spaghetti to the skillet and toss to coat evenly with the sauce.
- Finish with Cheese: Stir in the grated Parmesan cheese until it melts and the sauce is creamy.
- Serve: Plate the pasta and top with chopped fresh basil and extra Parmesan cheese if desired. Enjoy!
Notes
- Use Fresh Ingredients: Whenever possible, use fresh vegetables and herbs for the best flavor.
- Adjust the Seasoning: Taste the sauce as it simmers and adjust the seasoning as needed. You might want to add more salt, pepper, or other spices to suit your taste.
- Reserve Pasta Water: Before draining the spaghetti, reserve a cup of pasta water. You can use this to adjust the consistency of the sauce if needed.
- Freeze Leftovers: This pasta dish freezes beautifully. Just let it cool completely, then transfer it to an airtight container and freeze for up to 3 months.
