Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 scoop protein powder (unflavored or vanilla)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup Greek yogurt
  • 1/2 cup milk
  • 1/4 cup olive oil
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced ham or cooked bacon
  • 1/4 cup chopped fresh chives
  • Optional toppings: everything bagel seasoning, sesame seeds, poppy seeds

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with non-stick spray.
  2. Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, protein powder, baking powder, baking soda, salt, black pepper, garlic powder, and onion powder.
  3. Combine Wet Ingredients: In another bowl, mix the Greek yogurt, milk, olive oil, and eggs until well combined.
  4. Mix Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Add Mix-Ins: Fold in the shredded cheddar cheese, diced ham or bacon, and chopped chives.
  6. Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle with your choice of toppings, if desired.
  7. Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Cool: Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

  • Storage: Store the muffins in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
  • Freezing: To freeze, let the muffins cool completely, then wrap them individually in plastic wrap and store in an airtight container or freezer bag. Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
  • Reheating: Reheat the muffins in the oven at 350°F (175°C) for 10-15 minutes, or in the microwave for 30-60 seconds.
  • Customization: Feel free to customize the mix-ins to suit your taste. Try different cheeses, meats, or vegetables.
