Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 lb cheese tortellini
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded provolone cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil
  • Optional toppings: shredded cheese, chopped parsley

Instructions

  1. Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain any excess fat.
  2. Sauté the Vegetables: Add the onion, garlic, bell pepper, and mushrooms to the pot. Cook until the vegetables are softened, about 5 minutes.
  3. Add the Tortellini and Broth: Stir in the cheese tortellini and beef broth. Bring the mixture to a boil.
  4. Simmer: Reduce the heat to low, cover the pot, and let the pasta simmer for 10-12 minutes, stirring occasionally, until the tortellini is cooked through.
  5. Stir in the Cream and Cheese: Add the heavy cream and shredded provolone cheese. Stir until the cheese is melted and the sauce is creamy.
  6. Season: Add the salt, black pepper, and paprika. Stir well to combine.
  7. Serve: Ladle the pasta into bowls and top with your favorite toppings. Enjoy!

Notes

  • Use Fresh Ingredients: Whenever possible, use fresh vegetables and herbs for the best flavor.
  • Adjust the Seasoning: Taste the pasta as it simmers and adjust the seasoning as needed. You might want to add more salt, pepper, or other spices to suit your taste.
  • Thicken the Sauce: If you prefer a thicker sauce, you can stir in a cornstarch slurry (1 tbsp cornstarch mixed with 1 tbsp water) before serving.
  • Freeze Leftovers: This pasta freezes beautifully. Just let it cool completely, then transfer it to an airtight container and freeze for up to 3 months.
