Packed with tender chicken, melted mozzarella, fresh vegetables, and a tangy marinara sauce, this panini is sure to become a favorite in your household. Whether you’re looking for a delicious lunch option or a meal to prep for the week, this recipe has you covered.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 4 slices of ciabatta bread
  • 4 slices of mozzarella cheese
  • 1/2 cup of marinara sauce
  • 1/2 cup of sliced red onion
  • 1/2 cup of sliced bell peppers
  • 1/2 cup of fresh basil leaves
  • 2 tbsp butter

Instructions

  1. Cook the Chicken: Heat the olive oil in a skillet over medium heat. Season the chicken breasts with Italian seasoning, salt, and pepper. Cook the chicken for 6-7 minutes on each side, or until cooked through. Let the chicken rest for a few minutes, then slice it into thin strips.
  2. Assemble the Panini: Spread a layer of marinara sauce on one slice of ciabatta bread. Top with sliced chicken, mozzarella cheese, red onion, bell peppers, and fresh basil leaves. Place the other slice of ciabatta bread on top.
  3. Cook the Panini: Heat the butter in a skillet or panini press over medium heat. Place the assembled panini in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. If using a panini press, cook according to the manufacturer’s instructions.
  4. Serve: Slice the panini in half and serve immediately. Enjoy!

Notes

  • Use Fresh Ingredients: Whenever possible, use fresh vegetables and herbs for the best flavor.
  • Adjust the Seasoning: Taste the chicken as it cooks and adjust the seasoning as needed. You might want to add more salt, pepper, or other spices to suit your taste.
  • Preheat the Panini Press: If using a panini press, make sure to preheat it before adding the sandwich. This will help achieve those beautiful grill marks and ensure even cooking.
  • Wrap for Later: If you’re meal prepping, wrap the assembled panini in foil and store in the fridge. When ready to eat, heat in the panini press or on the stovetop.
