The combination of ripe tomatoes, fresh basil, tangy balsamic vinegar, and al dente pasta creates a symphony of tastes that will have your taste buds dancing. It’s easy to make, customizable, and sure to be a hit with everyone!

Ingredients

Scale
  • 12 oz pasta (such as fusilli or rotini)
  • 2 cups cherry or grape tomatoes, halved
  • 1/2 red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 cup crumbled feta cheese (optional)
  • Optional add-ins: sliced cucumber, chopped bell pepper, Kalamata olives

Instructions

  1. Cook the Pasta: Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. Prepare the Vegetables: While the pasta is cooking, halve the tomatoes, finely chop the red onion, mince the garlic, and chop the basil leaves.
  3. Make the Dressing: In a small bowl, whisk together the balsamic vinegar, olive oil, salt, black pepper, and dried oregano.
  4. Combine the Ingredients: In a large bowl, combine the cooked pasta, tomatoes, red onion, garlic, and basil. Pour the dressing over the top and toss to coat.
  5. Add the Cheese: If using, sprinkle the crumbled feta cheese over the top and gently toss to combine.
  6. Serve: Serve immediately or refrigerate for at least 30 minutes to let the flavors meld together. Enjoy!

Notes

  • Use Fresh Ingredients: Whenever possible, use fresh, ripe tomatoes and basil for the best flavor.
  • Adjust the Seasoning: Taste the salad as you go and adjust the seasoning as needed. You might want to add more salt, pepper, or other herbs to suit your taste.
  • Chill Before Serving: This salad tastes even better after it’s had a chance to chill in the fridge for a bit. The flavors will meld together and intensify.
  • Add More Veggies: Feel free to add extra vegetables like sliced cucumber, chopped bell pepper, or Kalamata olives for added flavor and crunch.
