Ingredients
Scale
- 1 lb salmon fillets, cooked and flaked
- 1 cup breadcrumbs
- 1/2 cup mayonnaise
- 1/4 cup finely chopped fresh parsley
- 1/4 cup finely chopped fresh dill
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup all-purpose flour
- 2 large eggs, beaten
- Vegetable oil, for frying
- Optional toppings: lemon wedges, tartar sauce, fresh herbs
Instructions
- Prepare the Salmon: Cook the salmon fillets until they are fully cooked and flake easily with a fork. Let them cool, then flake the salmon into small pieces.
- Mix the Ingredients: In a large bowl, combine the flaked salmon, breadcrumbs, mayonnaise, parsley, dill, red onion, garlic, lemon zest, lemon juice, Dijon mustard, salt, and black pepper. Mix well until all the ingredients are evenly combined.
- Form the Croquettes: Using your hands, form the salmon mixture into small patties, about 2 inches in diameter.
- Coat the Croquettes: Place the flour, beaten eggs, and additional breadcrumbs in separate shallow bowls. Dredge each croquette in the flour, shaking off any excess. Then dip it in the beaten eggs, and finally coat it in the breadcrumbs, ensuring it is fully covered.
- Fry the Croquettes: Heat about 1/2 inch of vegetable oil in a large skillet over medium heat. Once hot, add the croquettes and cook for 2-3 minutes on each side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
- Serve: Serve the croquettes hot with your favorite toppings, such as lemon wedges, tartar sauce, or fresh herbs. Enjoy!
Notes
- Use Fresh Salmon: For the best flavor, use fresh salmon fillets. You can also use canned salmon, but make sure to drain it well.
- Adjust the Seasoning: Taste the salmon mixture before forming the croquettes and adjust the seasoning as needed.
- Chill the Mixture: If the salmon mixture is too soft to form into patties, chill it in the refrigerator for about 30 minutes to firm it up.
- Freeze Leftovers: These croquettes freeze beautifully. Just let them cool completely, then transfer them to an airtight container and freeze for up to 3 months.
