For the Chicken Patties:

  • 1 tbsp olive oil

  • 1 bell pepper, sliced (any color)
  • 1 onion, sliced
  • 1 tbsp olive oil
  • 1 tsp fajita seasoning (or a mix of chili powder, cumin, and paprika)
  • Salt and pepper to taste

  • 4 burger buns
  • Lettuce leaves
  • Sliced tomatoes
  • Avocado slices (optional)
  • Sour cream (optional)
  • Salsa (optional)

Instructions

  1. Prepare the Chicken Patties: In a bowl, combine the ground chicken, finely chopped onion, minced garlic, chili powder, cumin, paprika, salt, and black pepper. Mix well until all the ingredients are evenly distributed. Form the mixture into 4 equal-sized patties.
  2. Cook the Patties: Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the chicken patties and cook for 5-7 minutes on each side, or until they are cooked through and no longer pink in the middle.
  3. Prepare the Fajita Topping: While the patties are cooking, heat another 1 tbsp of olive oil in a separate skillet over medium heat. Add the sliced bell pepper and onion. Cook until the vegetables are softened and slightly caramelized, about 5-7 minutes. Season with fajita seasoning, salt, and pepper.
  4. Assemble the Burgers: Toast the burger buns if desired. Place a chicken patty on each bun, top with the fajita topping, lettuce, tomato, avocado slices, sour cream, and salsa (if using). Serve immediately.
