  • 2 boneless, skinless chicken breasts
  • 1 ripe avocado
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup crumbled feta cheese (optional)
  • 2 whole grain tortilla wraps
  • 2 tbsp mayonnaise or Greek yogurt
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Cook the Chicken: Heat the olive oil in a pan over medium heat. Add the chicken breasts and cook until they are no longer pink in the middle, about 6-7 minutes per side. Season with salt and pepper. Let the chicken cool, then slice it into thin strips.
  2. Prepare the Avocado: Cut the avocado in half, remove the pit, and scoop out the flesh. Mash the avocado in a bowl and mix in the lemon juice, salt, and pepper.
  3. Assemble the Wrap: Spread the mayonnaise or Greek yogurt evenly over the tortilla wraps. Layer the chicken strips, mashed avocado, shredded lettuce, diced tomatoes, and feta cheese (if using) on top.
