- 2 lbs beef shanks with bone marrow
- 1 large onion, quartered

- 2 inches of ginger, sliced
- 2 large potatoes, quartered
- 2 corn on the cob, cut into 2-inch pieces
- 1 bunch of bok choy, leaves separated
- 1 bunch of green onions, chopped
- 10 cups of water
- 2 tbsp fish sauce (patis)
- 1 tbsp salt
- 1 tsp black peppercorns
- Optional toppings: calamansi or lemon wedges, soy sauce
Instructions
- Prepare the Beef: In a large pot, combine the beef shanks, onion, garlic, ginger, and water. Bring to a boil, then reduce the heat to low and let it simmer for 2-3 hours, or until the beef is tender.
- Skim the Fat: As the beef simmers, skim off any fat that rises to the surface.
- Add the Vegetables: Once the beef is tender, add the potatoes, corn, and bok choy to the pot. Cook for an additional 15-20 minutes, or until the vegetables are tender.
- Season: Stir in the fish sauce, salt, and black peppercorns. Taste and adjust the seasoning as needed.
