  • 2 lbs beef shanks with bone marrow
  • 1 large onion, quartered
  • 1 head of garlic, cloves separated and peeled
  • 2 inches of ginger, sliced
  • 2 large potatoes, quartered
  • 2 corn on the cob, cut into 2-inch pieces
  • 1 bunch of bok choy, leaves separated
  • 1 bunch of green onions, chopped
  • 10 cups of water
  • 2 tbsp fish sauce (patis)
  • 1 tbsp salt
  • 1 tsp black peppercorns
  • Optional toppings: calamansi or lemon wedges, soy sauce

Instructions

  1. Prepare the Beef: In a large pot, combine the beef shanks, onion, garlic, ginger, and water. Bring to a boil, then reduce the heat to low and let it simmer for 2-3 hours, or until the beef is tender.
  2. Skim the Fat: As the beef simmers, skim off any fat that rises to the surface.
  3. Add the Vegetables: Once the beef is tender, add the potatoes, corn, and bok choy to the pot. Cook for an additional 15-20 minutes, or until the vegetables are tender.
  4. Season: Stir in the fish sauce, salt, and black peppercorns. Taste and adjust the seasoning as needed.
  5. Serve: Ladle the soup into bowls and garnish with chopped green onions. Serve with calamansi or lemon wedges and soy sauce on the side. Enjoy!
