  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade: In a bowl, whisk together the olive oil, soy sauce, honey, garlic, salt, black pepper, paprika, and oregano.
  2. Marinate the Chicken: Place the chicken cubes in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken, bell peppers, red onion, zucchini, and cherry tomatoes onto the skewers.
  4. Grill the Skewers: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
