Ingredients
Scale
- 1 lb boneless, skinless chicken breasts, cut into cubes
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 zucchini, sliced into rounds
- 1 cup cherry tomatoes
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp dried oregano
- Wooden or metal skewers
Instructions
- Prepare the Marinade: In a bowl, whisk together the olive oil, soy sauce, honey, garlic, salt, black pepper, paprika, and oregano.
- Marinate the Chicken: Place the chicken cubes in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours.
- Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken, bell peppers, red onion, zucchini, and cherry tomatoes onto the skewers.
- Grill the Skewers: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
- Serve: Remove the skewers from the grill and let them rest for a few minutes. Serve hot with your favorite dipping sauce.
Notes
- Use Uniform Pieces: Cut the meat and vegetables into uniform pieces to ensure even cooking.
- Don’t Overcrowd the Skewers: Leave a little space between each piece to allow for even cooking.
- Preheat the Grill: Make sure your grill is preheated to medium-high heat before adding the skewers.
- Baste with Marinade: Brush the skewers with any leftover marinade while grilling for extra flavor.
