Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained and rinsed
  • 1 cup beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tbsp olive oil
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain any excess fat.
  2. Sauté the Vegetables: Add the onion, garlic, bell pepper, carrots, and celery to the pot. Cook until the vegetables are softened, about 5 minutes.
  3. Add the Remaining Ingredients: Stir in the diced tomatoes, kidney beans, corn, beef broth, salt, black pepper, paprika, and cumin. Bring the mixture to a boil.
  4. Simmer: Reduce the heat to low, cover the pot, and let the mixture simmer for 20-25 minutes, stirring occasionally.
  5. Bake: Transfer the mixture to a baking dish and top with shredded cheese. Bake at 375°F (190°C) for 20-25 minutes, until the cheese is melted and bubbly.
  6. Serve: Let the bake cool for a few minutes, then serve with your favorite toppings. Enjoy!

Notes

  • Use Fresh Ingredients: Whenever possible, use fresh vegetables and herbs for the best flavor.
  • Adjust the Seasoning: Taste the mixture as it simmers and adjust the seasoning as needed. You might want to add more salt, pepper, or other spices to suit your taste.
  • Thicken the Gravy: If you prefer a thicker gravy, you can stir in a cornstarch slurry (1 tbsp cornstarch mixed with 1 tbsp water) before serving.
  • Freeze Leftovers: This bake freezes beautifully. Just let it cool completely, then transfer it to an airtight container and freeze for up to 3 months.
